Just in time for St. Patrick’s Day. You can serve these easy sandwiches for the special day or use up leftover corned beef the day after for a quick, easy, kid-friendly sandwich. Equipment

  • Panini or Sandwich Press or Skillet Can also bake sandwich in oven

Ingredients

  • 8 oz. Top Round Corned Beef about 8 thin slices
  • 4 slices Light Swiss Cheese
  • 8 slices Multi-Grain Sourdough
  • 4 oz Purple/Green Cabbage with Carrots
  • 2 tbsp Fat-Free Thousand Island Dressing*
  • 1 carrot

Instructions

  • Mix dressing with cabbage mix; set aside
  • Put 2 thin slices or 1 thick slice corned beef onto 1 whole slice bread
  • Add 1 slice Swiss cheese
  • Add 1-2 tbsp cabbage mix
  • Add 2nd slice bread on top
  • Put sandwich into sandwich press (preferred method) – cook approximately 10 minutes
  • OR toast in frying pan until cheese is melted (probably won’t brown unless you add oil)
  • Serves 4-8

Notes

*Bottled is okay, or if you prefer, you can make the following dressing: ½ cup NF Plain Greek Yogurt, 2 Tbsp Ketchup, 1 Tbsp White Vinegar, 1 Tbsp Minced Fresh Onion (or Dried Onion Powder to taste) and Sweet Pickle Relish to taste.

  • 1 Baking Sheet Cover with Foil, parchment, or spray with non-stick spray

Ingredients

  • 1 pound Orange Sweet Potato
  • 2 tbsp Canola Oil
  • 1 tsp Smoked paprika
  • 1 tsp Lawry’s garlic salt

Instructions

  • Preheat Oven to 400 degrees Fahrenheit
  • Cut sweet potato in ½ inch strips/pieces
  • Toss in oil, paprika and garlic salt
  • Put on sheet pan into 400 F degrees preheated oven
  • Cook until crisp or about 20 minutes, checking frequently to prevent burning
  • Serves 4
